The vent hood of the grill was broken one day when we showed up at Sumika. So instead of getting skewers grilled on "binchotan" (Japanese white charcoal), we sat at the counter and allowed the chef to serve up whatever alternatives he fancied. These dishes were what we got. They were so very good.
